Sumptuous Tomato Sauce for Baking

Sauté on medium heat:

1 Tablespoon canola or olive oil and 1 small onion chopped (8 oz)

2 teaspoons dry basil, 2 teaspoons dry oregano, 1 teaspoon black pepper

(Note: for a deeper, heartier sauce, lightly caramelize the onions.)

After 3 minutes, or when onions are clear, add:

4 cloves of garlic, chopped, and 2 teaspoons salt

 

Sauté one more minute and then add:

5 large tomatoes or 8 medium tomatoes, quartered, or use two 28 oz cans of whole peeled tomatoes

 

Cook down on medium heat for 45 minutes

If you have a hand blender, carefully break down tomatoes into a sauce. Otherwise, pour into a blender.  You can choose how chunky you want the sauce to be.

 

Options:

The recipe for basic tomato sauce omits the oregano

35 minutes into cooking, add ½ cup of fresh, chiffonade basil
